Dubliner, an Irish Delight! Weekly Cheesing

Today's cheese is the Dubliner! This one is actually pretty easy to find in most stores! It's really easy to transport due to its cheddar-like nature, but it's not QUITE cheddar! Technically speaking it's a "granular cheese" which in layman's terms means it's a similar to a texture but isn't made the same way as cheddar is. The cheese has been made since about 1990! It was originally made to just be cheddar like, using the equipment they used to make it which I think they did quite successfully!

The cheese itself is sharp like a cheddar but has a lovely sweet tone to it. It's the sweetest cheddar but totally not a cheddar you'll ever have! It goes great with breads and crackers and with a nice full red wine. Mostly though I just like to eat it as a snack! It also melts REALLY well and makes a BANGING mac and cheese!
Kerry Gold prides itself in making all its products using milk from it's famous herd of cows who are fed only the BEST of grass! The milk comes from three main farms in Ireland. The cows themselves are Holstein Friesians, the classic black and white cows. Aren't they cute? As I've said before the milk quality is incredibly important to the cheese making process. The things you feed your animals and how they are treated can affect everything! That's why when you have a really fancy or well known cheese you usually see them talking about how they treat their animals and how they run the farms!
