Prepare for the winter

This is very valuable information. the major concern should be to keep our immune system up and prepare for the winter. I was looking into recipe for the ones living in the northern hemisphere and need to preserve food. I have a lot of experience in this since I grew up after the WW2 in Europe and we were required to have a cellar full of goodies for the winter.

I had a big garden and was planting a lot of veggies and also had berries and fruit trees. In this time I was mostly working with freezing and making jam and canned fruit in glass chars. I had a big sand pile in the cellar and put in carrots and certain salads, shelf for apple, pears and potatoes and in the separate section some wine. I had food generally until March/April.

This time it is more easy and I recommend you to buy a dehydrator oven to prepare and store food. The pack it airtight (maybe you consider to buy a vacuum device) and you will have the most delicious food the whole winter long.

Now in fall there is a great opportunity to get things directly from farmers if you look around and there are many selling organic food directly to clients. Look around.

I found also this very delicious recipe on line how to preserve tomatoes. You can also just put them in the dehydrator and then later take them out and sprinkle them with rosemary, salt etc. and put it in a small char with some olive oil for a day and then you can eat them. Delicious….

If you focus on getting creative for the winter, it’s much easier to go through this time and be positive. We won’t help anyone if we focus on lack. Maybe you consider to make something for this Christmas to give away that is more valuable than some stuff you buy and the people don’t need it really.

Many years ago I had a lot of apples on a tree that were not ideal for preserving or keeping in the cellar. So I tested to make jam, and it was fantastic! So I made a lot of jam some with vanilla, some with spices, some with cinnamon, six different tastes and packed the jars in a nice box as gifts for Christmas. They all loved it and were very happy with something that was home made! Another year I did the same with grapes and it was also a great success.

Get creative and prepare for a good time ahead. Don’t give in to the fear mongering media and take good care of yourselves!!

Even if you live in a country that has food all around the year, it is fun to make some preserved foods. I am making now Passion fruit syrup and jam. I have a lot in the moment, way too much to eat myself. And it takes another 8 or so month until they are ripe again. I love passion fruit syrup and it's easy to make! Also my friends like it and sometimes this is the perfect little gift to bring along.

For the syrup I make the passion fruit juice, just cook and strain it then add for 1 litre fruit juice 1/2 kg of a good sugar (I use palm sugar) and cook it, let it simmer for about 5 min and fill it into bottles, close airtight.
Jam: 1 litre juice and 800 g sugar, 1 table spoon of pectin, stir, cook, simmer for 5 minutes and constantly stir and then fill in little jam jars. Close airtight.
