WHAT YOU’LL NEED:
1/2 cup cooked quinoa
1/2 lb smoked salmon (Whole Foods fish market)
1/2 package Gotham Greens, chopped
1/2 cup mango, chopped
1/2 cup cucumber, sliced
2 sprigs green onion, chopped
2 big pinches alfalfa sprouts
2 Tbsp sunflower seeds
2 Tbsp olive oil
1 tsp raw honey
squeeze of lemon
HOW TO MAKE IT:
1 // cook quinoa according to package. let cool before adding to salad
2 // prep your veggies. in a salad bowl, add greens, mango, cucumber, green onions, lemon squeeze + honey drizzle. toss onto combine + add to serving bowls.
3 // top salad with bite sized pieces of smoked salmon, sunflower seeds, alfalfa sprouts + drizzle of your favorite olive oil
TIPS:
smoked salmon is one of the BEST things you can get at Whole Foods, in my opinion (in terms of taste + value for your dollar!)
