Hey, Thank you for your support.. I love sharing easy recipes, particularly for people who want to increase their veg intake but don't really like the textures and awkward bits! I've spent the last 4 years developing my business and helping local people to eat better and create more sustainable eating habits. I am passionate about sourcing ingredients as locally as possible and really champion veg packed meals that give that same 'warm hug' that you get from good pub grub.
As a self confessed 'recovering veg hater', I know how tricky it is as an adult to try and gradually wean yourself on to eating the good stuff.. especially when you haven't got your mum gently nudging you to eat your greens.. instead the memory is more like mum breathing down your neck threatening to serve up your cold peas for breakfast the following morning!!! (yup, I was THAT child)
I have seen the benefit first hand that increasing the range of nutritious vegetables in my diet has had not only on my physical health but also my mental health too. In my mid 20's I needed daily meds to control my inflammatory arthritis, which at the time made me feel like total shite and REALLY didn't help me to be able to manage the stresses that came with my busy teaching job.
It is always the tricky things that are thrown our way that help to form what we become. After researching so many different things to help (I was determined to not let this thing beat me!!) I ended up overhauling my eating, had a good period of self reflection and gradually learnt to introduce veg/cut out the meat & especially the dairy. I now don't need my meds or pain relief, and haven't needed them for 6 years, at the age of 38 I feel healthier than I was 10 years ago.
I'd love to write a 'proper book' to share my recipes to an even wider audience and help people overcome their fear of veggies! - in the meantime, it's still a work in progress and I'll be busy cooking and creating new ways to hide as many healthy things into my recipes as possible to help inspire others to make the same positive changes as I did.
There's a couple of FREE downloads with lots of content to help people on their culinary journey.. In true teacher style they are intended to be accessible for all with elements to print off to help you to plan your own weekly meals.
