This recipe is the ultimate 'Speedy Store Cupboard Sandwich Filler'.. Perfect for those moments when the fridge is looking a little bit empty but you need something a bit healthier than a jam sandwich to fill lunch boxes.

As the name suggests, this plantbased sandwich filler uses the amazingly versatile chickpea as its main ingredient, making it full of fibre and clean plantbased protein to keep you filled up all afternoon!

To make enough 'Coronation Chickpea Sandwich Filler' for approximately 4 sandwiches you will need:

  • 1 Can of Chickpeas (drained) 45p

  • 1 Tablespoon of Vegan Mayo (20p)

  • 1 Teaspoon of Mango Chutney (10p)

  • 1 Teaspoon of Curry Spice Paste - We usually go for a korma or tikka flavour (15p)

  • 1 Spring Onion (finely diced) 10p

How to do it:

This recipe couldn't be simpler... Pop your drained chickpeas into a bowl and use a potato masher to create a rough texture. Try not to be tempted to use a stick blender for this or you will end up with houmous!

Next, add all of your other ingredients and mix well.

This filler is best used in wholemeal bread with some baby leaf spinach or peashoots.

Your mix will keep in an airtight tub in the fridge for 3 days.
