🐟 Cream Cheese & Spinach–Stuffed Salmon
Ingredients (Serves 4)
- 5 salmon filets
- 4 oz cream cheese, softened
- 4 oz fresh spinach, finely chopped
- ½ cup grated Parmesan
- 3 tsp fresh minced garlic (or garlic paste)
- Salt, pepper & garlic powder
- Seafood Spectacular Seasoning (or your favorite spice blend)
- Olive oil, butter
- Lemon slices
- Optional: smoked paprika & a touch of brown sugar for depth
Instructions
1. Prep the salmon
- Season the tops and bottoms of the filets with Seafood Spectacular (or sprinkle with salt, pepper, garlic powder, smoked paprika and a pinch of brown sugar).
- Use a sharp knife to cut a pocket into each filet (about ¾ of the way through), careful not to slice completely.
2. Make the filling
- In a bowl, combine cream cheese, spinach, Parmesan, garlic, salt, pepper, and garlic paste.
3. Stuff the filets
- Spoon the mixture into each salmon pocket and gently smooth to fill.
4. Sear the salmon
- Heat a skillet over medium-high. Add a drizzle of olive oil.
- Place filets skin‑side down and sear for about 6 minutes.
- Tuck lemon slices into the pan around them.
5. Turn and baste
- Flip the filets and cook ~6 more minutes.
- Add a generous knob of butter and spoon the bubbling juices over the fish to baste.
6. Finish in the oven
- Preheat to 350 °F (175 °C).
- Transfer the skillet to the oven and bake for an extra 5–10 minutes (depending on filet size)—until the salmon is just cooked through.
7. Serve
- Plate the fish, serve with pan juices and lemon. Enjoy every bite!
