"Fall Thing" - that's what I wrote at the top of the recipe?
I already had a sweet potato, and an acorn squash so that's why I chose this recipe.
Brown the ground turkey - then add red potatoes, 1 sweet potato, 1 cut up acorn squash, Rotel tomatoes, rinsed kidney beans, bone broth and assorted spices to the crockpot.
We've never tried mixing all this stuff together before so we will see.
If it's more like a stew we will just have it alone, if it's thick we can have a veggie side.
Mediterranean Chicken
Another crockpot recipe. Super easy. Put 1 lb chicken, a little water, artichoke hearts, and roasted red peppers in the crock. Cook for four hours. Most** people add sliced black olives but the Hubs doesn't like them.
I serve the chicken with Uncle Ben's ready rice and salad.
If I need a third dinner I'll pull out some frozen flounder filets
My son likes panko and parmesan. If you like butter use that and some garlic. Experiment with white fish - less is more. Bake in the oven for 18 mins @350. (or package directions)
