This rich, creamy dish is made with short-grain rice and stock. It can be flavoured with cheese, truffles, wine, butter and many other ingredients.

This pizza is named after the city of its invention and is protected in the UK and the EU by a Traditional Speciality Guaranteed (TSG) indicating it may only be called this name using the specified products from the area. It is known as 'Margherita' if the TSG cannot be met.
