Hot Peanut Butter Fudge

I made this fudge today.....hot (as in spicy) peanut butter. I have never had that. It is a product from Jamaica. Peanut butter with a kick. It is great. The recipe was really easy, but of course, being the Quirky Cook that I am, I had to change it up....so here is my twist on a classic.

2 cups of brown sugar

1tsp vanilla

1/4 cup of unsalted butter

1/2 cup of milk

3/4 cup peanut butter

Himalayan salt

In a pot I put the brown sugar and the milk......I used a whisk to stir the mixture. Put the heat on high. When it comes to a boil you leave it allow, no stirring required. 2 1/2 minutes (put on your timer) after it begins to boil. Take it off the heat and add the peanut butter, butter and the vanilla. The heat from the sugar/milk combo is hot enough to melt the peanut butter and the butter.....keep stirring until it is mixed well. Pour it into a square dish quickly. It sets quite quickly. Then sprinkle Himalayan salt (the pink salt) over the top. Try hard to let it cool, then put it in the fridge to get firm. I like my fudge cold.

Here's the kicker....not all of you can get Jamaican hot pepper peanut butter....but my suggestion is to put a little cayenne pepper in the mixture. Just try it! You might be pleasantly surprised.
