Taza de Amor (Cup of Love) welcomes local unsung heroes- the neighborhood FRUIT and VEGETABLE stores, who are always willing to extend credit for the cause. More often than not towards the end of the month, funds get tight, and our local greengrocers are often ready with "cuando pueda" - "when you can". Lord love these folks.
Today's fare: ENCHILADAS! My home made sauce from home grown tomatoes. Ham, potato, jalapeno, onion and cheddar smothered in a rich tomato sauce and baked. Served with a side of chilled honey jalapeno cole slaw, and a ripe in-season mango.
Thanks to local purveyors, who take a risk by extending credit when Taza de Amor runs short. It is so amazing to live in a third world country and have subsistence level mom and pop vegetable growers sacrificing their own livelihood to help the old and ill. I suspect somewhere it is written that this is the definition of love.
