Meal Plan week of 11/8/20

I planned an easy week of meals because I just came off the ADHD conference and frankly, I'm exhausted. Have no interest in cooking.

Master Shopping List

  • Bananas

  • Berries

  • Salad

  • Onion

  • Baby carrots/celery/mini peppers

  • Chicken 3lbsish

  • Chicken broth

  • Ground turkey 1 lb

  • Black beans

  • Garbanzo beans

  • 1 Jar cheap salsa (store brand)

  • Taco seasoning

  • Taco shells

  • Quick cooking steel cut oats (natural foods section)

  • Applegate hotdogs

  • Beyond Meat breakfast sausages

  • Frozen broccoli/mixed veggies

  • Hot dog buns/hamburger buns

  • Dave's killer bread

  • Paul's lunch meat (Boars head turkey)

  • Barbecue sauce (lower sugar?)

  • Seltzer

  • Goldfish

Dinners

  1. Taco Junk - I use an old South Beach Diet recipe for this, omitting the corn. We don't love corn. And I don't use ranch dressing.

  2. Shredded Chicken - I make 3 lbs of this at a time and serve it different ways.

    Take your chicken breasts put them in an instant pot and dump in about half a can of chicken broth. Cook on high pressure about 25 mins.

    Shred the chicken with forks, adding in broth so it's not too dry.

    Store in containers - serve adding barbecue sauce, taco seasoning, or any other seasoning you like. Just mix it in. You can also use it in soup or to make chicken salad if you like mayo.

Sides will be salad, frozen veggies. I'm limiting the options this week to save energy.

Lunches

Hubs went shopping for me, so he will be eating his sandwiches and the potato chips he had to have. My son will probably eat pbj and leftover taco junk. He requested his special hotdogs, so that's an option as well. I'll eat salads, leftovers.

Breakfasts

The boys requested oatmeal, so we will have that. Cheerios are a staple. Eggs we keep stocked. They requested Beyond Meat veggie sausages so I'll heat those upon request.

Snacks

Well....leftover Halloween candy. Goldfish, pretzels, fruit, veggies with hummus. The boys made chocolate chip cookies while I was in conference so we will eat those, too.

As you can see I'm not really "cooking" this week, but we are certainly not starving.
