Dinners
My son loves this Chili Mac - I've made it before and it makes a ton, so I can freeze if we have leftovers. I'll probably make it Sunday and serve with salad. Or frozen steamed broccoli. I'm always trying to get more veggies into the boys.
I'm getting really ambitious with this Chicken Parm Recipe. I'll be using frozen chicken so I have to remember to get that out. (I list all the ingredients in the master list, even if I already have them) I'll probably have the hubs trim the chicken so it's more evenly sized, and he will help me with dredging because I always make a mess with this sort of thing.
If you're feeling unmotivated I'd suggest not dredging at all and just we patting the bread crumbs onto the chicken. I've done it before, and nobody even noticed they weren't totally breaded.
Also - I highly recommend chicken tenders. They are evenly sized and don't require any trimming or pounding. You can line them up in the baking dish and it's done.
Again sides are always veggies and/or salad.
Lunches
As you know I limit the choices to keep things simple.
Leftovers, sandwiches, salads, smoothies. Whatever - it's the holiday season and there's so much food around I don't even care.
Breakfasts
Oatmeal, cereal, yogurt, cookies if nobody is watching.
